Den danske bøfsandwich fylder 70 år – hæderspris til opfinderne

Lørdag den 25. Maj er det præcis 70 år siden at Anni og Oscar Petterson introducerede offentligheden for en dansk version af den amerikanske hamburger – bøfsandwichen – på Oscars Bøfbar på Dyrehavsbakken, nord for København.

At Oscars Bøfbar stadig eksisterer og er ejet af samme familie, er et bevis på betydningen af – og succesen med – den velkendte bøf mellem to stykker brød, bløde løg, sennep og ketchup. Præcis sådan som det startede på Bakken for 70 år siden, hvor man dengang kunne købe en bøfsandwich for én krone.

Det er med udsøgt fornøjelse at De Brune Riddere, dommerpanelet bag den årlige kåring af Danmarks Bedste Bøfsandwich, hermed overrækker årets hæderspris i 2019, Den Brune Legende, til Oscars Bøfbar på Bakken, nord for København. De Brune Riddere ønsker at hylde arnestedet for den danske bøfsandwichkultur, som vi elsker og holder af: Tillykke med prisen og tak for at I var med til at starte det hele!

Tredje generation og nuværende indehaver af Oscars Bøfbar, Frank Hartvig Andersen, udtaler, “Vi har serveret bøffer til flere generationer og det er en tilbagevendende tradition for rigtig mange at runde bøfbaren, når de er herude – f.eks efter en forestilling i Cirkusrevyen. I dag kan man også få ristede løg og remoulade i sin bøfsandwich, men ellers er det den samme opskrift som for 70 år siden, hvor bøfferne ligger og hygger sig i den lage som Anni opfandt og vi stadig bruger. Vi er meget glade for og stolte af at modtage hædersprisen fra Danmarks Bedste Bøfsandwich, som vi straks vil hænge op.

Formand for De Brune Riddere, Lasse H. Görlitz, fortsætter, “Den danske bøfsandwich har siden starten i 1949 udviklet sig i flere retninger rundt omkring i Danmark. Snakken om bøfsandwich kan hurtigt ende i en religionskrig, hvis der skal diskuteres sennep, mængden af surt – eller brun sovs. Selvom vores normale fokus er med en lidt anden kulinarisk vinkel, så er Oscars Bøf i dag en ægte klassiker. Det var Anni og Oscar der introducerede den amerikanske burger – bøfsandwichen – for hele Danmark. Og lad os være ærlige: Ingen Oscars Bøfbar, ingen brune riddere! Sidst men ikke mindst viser deres mangeårige  succes jo alt andet lige, at de har haft fat i noget rigtigt, helt fra start.

 

Skal der brun sovs på en bøfsandwich?
De fleste synes typisk at den måde en bøfsandwich bliver serveret på – der hvor de er fra – er den ‘rigtige’, men det eneste fælles for denne type kulinariske oplevelse er, at der ikke findes en facitliste.

Specielt på Sjælland oplever man oftest at bøfsandwichen stadig bliver udbudt uden sovs, ligesom den oprindelige udgave fra Oscars Bøfbar. Retfærdigvis er den sovseløse sandwich nemmere at spise da man ikke behøver kniv og gaffel – og det er da heller ikke det æstetiske udtryk der vinder med sovsen. Navnligt i Sønder- og Nordjylland er det normalt at putte sovsen over hele bøfsandwichen, mens man i andre egne, hælder den ud over bøffen og efterfølgende putter den øverste bolle på.

Ligesom pizzaen i hundredevis af år var uden kød og burgere blev serveret uden ost og bacon for 100 år siden, så byder evolutionen på forbedringer. Og når en bøfsandwich smager bedre, badet i det brune guld, hvorfor skulle man så lade være?

 

Hvem er De Brune Riddere?
De Brune Riddere er en non-profit forening og dommerpanelet bag den årlige kåring af Danmarks Bedste Bøfsandwich som har over 10.000 følgere på facebook, der har fulgt med siden det hele startede i 2012. De 10 dommere har blandede baggrunde, men har blandt andet erfaring fra at dømme landets bedst smagende hotdogs, danske og internationale BBQ-konkurrencer, samt officielle sovse-sommeliers, blandt meget andet. Fælles for alle De Brune Riddere er en stor passion omkring den brune danske version af den amerikanske burger, samt et helt elementært ønske om at kunne svare på spørgsmålet: Hvor får man Danmarks bedste bøfsandwich?

    in thе meantime enjoying his celebrity status ᴡith fellow prisoners and eveen tһe warders, οne of whom, a sadistic Irishman played Ƅy Brendan Gleeson, feeds һim cigarettes іn return for jokes.
